Ingredients

  • Dry Ingredients: 2 1/4 cups (280 g) all-purpose flour, 2 tsp ground ginger, 1 tsp ground cinnamon, 1/4 tsp ground cloves, 1/4 tsp ground nutmeg, 1/2 tsp baking soda, 1/2 tsp baking powder, 1/4 tsp fine sea salt, 2 tbsp instant espresso powder
  • Wet Ingredients: 3/4 cup (170 g) unsalted butter softened, 1 cup (200 g) packed brown sugar, 1/4 cup (60 ml) molasses, 1 large egg, 1 tsp pure vanilla extract
  • For Rolling: 1/4 cup (50 g) granulated sugar

Instructions

Preheat:
Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper
Mix Dry Ingredients:
Whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, baking powder, salt, and espresso powder
Cream Butter and Sugar:
Cream softened butter and brown sugar until light and fluffy
Add Wet Ingredients:
Beat in molasses, egg, and vanilla extract until well combined
Combine:
Gradually add dry ingredients to wet mixture mixing just until incorporated
Form Dough Balls:
Scoop tablespoon-sized portions and roll into balls, then roll each ball in granulated sugar
Arrange:

Cool:
