- For Rolling: 1/4 cup (50 g) granulated sugar
Instructions
- Preheat:
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper
- Mix Dry Ingredients:
- Whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, baking powder, salt, and espresso powder
- Cream Butter and Sugar:
- Cream softened butter and brown sugar until light and fluffy
- Add Wet Ingredients:
- Beat in molasses, egg, and vanilla extract until well combined
- Combine:
- Gradually add dry ingredients to wet mixture mixing just until incorporated
- Form Dough Balls:
- Scoop tablespoon-sized portions and roll into balls, then roll each ball in granulated sugar
- Arrange:
- Place dough balls 2 inches apart on baking sheets
- Bake:
- Bake for 9-11 minutes until edges are set and tops are crackled
- Cool:
- Cool on baking sheets for 5 minutes then transfer to wire rack to cool completely
