# Method:

- Set oven temperature to 325°F (160°C).
- Combine graham cracker crumbs or crushed Golden Oreos with granulated sugar and melted butter until evenly moistened; firmly press into the base of a 9-inch springform pan.
- Bake crust for 10 minutes, then remove and allow it to cool completely.
- Beat softened cream cheese and sugar until smooth and fluffy; add sour cream and vanilla extract and mix until combined. Add eggs one at a time, beating gently after each addition just until incorporated.
- Pour batter over cooled crust and bake for 45 to 50 minutes until the center is slightly jiggly. Remove from oven and cool completely, then refrigerate at least 4 hours to set.
- Dissolve strawberry gelatin mix in 1 cup boiling water, stir in 0.5 cup cold water; chill until thickened but not fully set (30 to 45 minutes).
- Fold whipped topping and chopped strawberries into thickened gelatin. Spread evenly over chilled cheesecake layer and refrigerate 2 to 3 hours until firm.
- Whip heavy cream with powdered sugar and vanilla extract in a cold bowl until stiff peaks form; spread gently over the strawberry layer.
- Mix crushed cookies with melted butter and dry strawberry gelatin powder until crumbs are evenly coated and vibrant in color.
- Sprinkle shortcake crumble generously over the whipped cream layer.
- Refrigerate until ready to serve. Run a knife around the pan edge, release and slice carefully before serving.
