01 - Pour filtered water into a sanitized glass jar. Dissolve organic cane sugar thoroughly. Add water kefir grains or ginger bug and fresh lemon juice, then stir gently using a non-metallic spoon.
02 - Cover the jar with a breathable cloth or coffee filter, securing it with a rubber band. Allow to ferment at room temperature (68–77°F) for 24 to 48 hours, until the base develops a light fizz and tang.
03 - Remove and strain out kefir grains or ginger bug with a fine mesh strainer. Discard or reserve for future use.
04 - In a pitcher, mix fermented soda base with fresh orange juice, lime juice, and mint leaves. Stir delicately to combine.
05 - Fill glasses with ice cubes. Pour mocktail mixture over ice, garnish with orange slices and extra mint leaves if desired. Serve immediately for optimal effervescence.
