→ Greens
01 - 8 large fresh spinach leaves, washed and dried
→ Filling
02 - 3.5 oz cream cheese, softened
03 - 1 tbsp fresh chives, finely chopped
04 - 1 tbsp fresh parsley, finely chopped
05 - 1 tsp lemon juice
06 - Salt and pepper, to taste
→ Vegetables
07 - 1 small carrot, julienned
08 - 1/2 small red bell pepper, julienned
09 - 8 small cherry tomatoes, for garnish
# Method:
01 - Combine cream cheese, chives, parsley, lemon juice, salt, and pepper in a small bowl and blend until smooth.
02 - Place each spinach leaf flat on a clean work surface.
03 - Spread approximately 1 tablespoon of the herbed cheese onto the center of each spinach leaf.
04 - Top the cheese spread with a few strips of julienned carrot and red bell pepper.
05 - Carefully roll each leaf, folding in sides to encase the filling, then secure with a toothpick.
06 - Top each wrap with a cherry tomato to mimic a holly berry and serve immediately or chill briefly before serving.
