# Method:
01 - Preheat the oven to 400°F.
02 - In a large skillet over medium heat, melt the butter. Add diced onions, carrots, celery, and minced garlic; sauté until softened, about 5 minutes.
03 - Sprinkle all-purpose flour over the vegetables and stir continuously for 1 minute to cook the flour.
04 - Gradually whisk in chicken broth and whole milk. Continue cooking and stirring until the mixture thickens, approximately 3 to 4 minutes.
05 - Add the cooked chicken, frozen peas, salt, black pepper, and dried thyme. Stir thoroughly to combine all ingredients evenly.
06 - Grease a 9x13-inch casserole dish and transfer the chicken mixture into it.
07 - In a medium bowl, combine all-purpose flour, baking powder, and salt. Stir in melted butter and whole milk just until combined. Fold in chopped parsley if using.
08 - Drop spoonfuls of dumpling dough evenly over the chicken mixture in the casserole dish.
09 - Bake uncovered for 25 to 30 minutes, or until dumplings are golden brown and cooked through.
10 - Remove from oven and allow to rest for 5 minutes before serving.
